Key findings
- Distillery base has stabilised at ~700 licensed / ~600 active craft producers. Growth normalises into a 1–2% per year trajectory through 2031; consolidation accelerates at the sub-scale tier.
- Federal excise is the single highest-leverage variable. At AUD 108.00/L LAL from 2 February 2026 (third-highest in the world), excise consumes 22–25% of typical craft gin RRP and 13–22% of craft whisky RRP. The Excise Remission Scheme cap lifts from AUD 350,000 to AUD 400,000 from 1 July 2026.
- Whisky is capital-intensive; gin is working-capital efficient. Mid-tier whisky build needs AUD 3–5 million Year-1 capital plus AUD 0.5–1.0 million annual maturation cohort capital locked 3–8 years. Mid-tier gin needs AUD 1.0–1.5 million Year-1 and reaches positive EBITDA by Year 2–3.
- Lark Distilling Co (ASX:LRK) FY25 delivered AUD 12.4 million revenue (+28% YoY), AUD 2.1 million EBITDA, 15,000-cask inventory. Lark’s listed multiples (2.5–3.0× revenue) provide the only true public-market valuation reference for the segment.
- Exports are an under-exploited optionality — AUD 200–300 million today versus a stated industry target of AUD 1 billion by 2035. NZ, China, South Korea, US, UK dominate by value.

Methodology
eFinancialModels Research synthesises Australian Taxation Office Excise Tariff Schedule data, Australian Distillers Association industry reports, market-data analyst sources (Expert Market Research, IMARC, IWSR via Drinks Trade, DeepMarketInsights), public-company filings (Lark Distilling Co ASX disclosures), trade press, and eFinancialModels’ own template-derived unit economics. Where headline numbers diverge across sources, the reconciliation table in the accompanying Source Verification workbook records each source’s value and the chosen baseline; competitor values diverging by more than 10% are cited as ranges. Forward-looking projections through 2031 reflect senior-analyst judgment grounded in regulatory trajectory, pipeline conversion, demand-driver strength, and macro risks — they are not outputs of a statistical model.
